Cider – Other Fruit
We mixed hot and tasty apple juice and malt. Then we soured the juice/wort? with probiotic yoghurt and left the mix to ferment with wild yeast in old wine barrels. After almost two years in oak we added 40% plums and left it another five months before bottling. So what is this then? A cider? A plum wine? A beer? We don’t know, but we like the taste of it. Sour, dry and refreshing.
